What is Espadín Capón?

Agua Mágica Espadín Capón is a 45% ABV mezcal to enjoy neat or in a cocktail. It is produced in San Juan del Río, Oaxaca, from mature Espadín agaves using the capón harvesting method.

A decision made in the field

The agave’s flower stalk is called the quiote. In the capón method, it is cut before it blooms. The term describes how the agave is handled before harvest; Espadín is the agave variety used in this expression.

Our Espadín agaves grow for seven years. That growing period is part of the bottle’s story, before roasting, fermentation or distillation begins.

Made by Julio Juan

Julio, the son of maestro mezcalero Don Rogelio Juan, makes this expression in San Juan del Río. The mezcal is milled with a stone tahona, fermented with wild yeasts in open-air pine vats, and distilled twice in copper.

It is bottled at 45% ABV—90 proof—compared with Ensamble’s 40% ABV.

Nose
Fermented pineapple, palo santo and citrus.

White chocolate, lime peel and eucalyptus.

Bitter orange, charred poblano and coffee bean.

Where to start mixing

A Margarita is a straightforward starting point: mezcal, lime and orange liqueur. A White Negroni gives you another way to explore it, alongside Suze and Lillet Blanc. For a stirred drink, try an Oaxaca Old Fashioned with mezcal, tequila, agave nectar and bitters.

Taste the mezcal on its own first, then notice how its character changes in the finished drink.

How does it compare with Ensamble?

Espadín Capón uses one agave variety and has a character that works beautifully on its own or in cocktails. Ensamble combines Espadín and Tobalá and is our expression for sipping. Both come from San Juan del Río, with different agaves, strengths and tasting profiles.
